My Waffles v1.0

waffle-thumbnail2   cups all-purpose flour
2   tbsp sugar
2   tsp baking powder
1/4 tsp cinnamon
1/4 tsp salt

3 eggs
1 3/4 cups milk
6 tbsp canola oil
1 tsp vanilla extract

Mix all dry ingredients together in a large bowl.
Add each of the wet ingredients to the dry while beating together.
Beat til smooth. I like to let the batter sit for a few minutes while the baking powder
does its thing – you’ll see little bubbles in the batter. I plug the waffle iron in, and set the Cuisinart iron to #4, and wait until it signals that its ready.

Spoon batter onto iron and spread out a bit.
Cook until the signal goes off and serve!

Cuisinart Waffles

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 3/4 cups low-fat milk
  • 6 tablespoons vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla

Directions

  1. Add dry ingredients to mixing bowl and stir to mix well.
  2. Add remaining ingredients and blend until smooth.
  3. Let batter sit for 5 minutes before using.
  4. Use less than you think on your 1st waffle, spreading batter with a non-stick spatula. Batter spreads and rises, so you don’t want to overfill your waffle iron.
  5. Cook until done–varies depending on temperature of your waffle iron.

try adding a couple tablespoons of brown sugar and a 1/4 teaspoon of cinnamon

Specialty Coffee Drinks

There’s nothing more refreshing on a hot summer day than I well made iced coffee drink – this time I’m not referring to the delicious Vietnamese iced coffee, but those other creamy, flavorful drinks that many cafe’s top with whipping cream and caramel or chocolate syrups.  mmmm… get those donuts outta my way Homer, and pass me the coffee!

Just the other day, as I was going through my daily ritual in preparing my usual 6-shot Americano, I decided I didn’t want something so hot… and into my 20oz Planetary Design thermal mug I threw in a couple ice cubes on top of the espresso shots, added 1/2 oz Caramel, and then a 50/50 blend of 18% coffee cream and 1% milk. Deeeelicoussss!!!

The Gourmet Sleuth web site has links to recipes that readers have created to emulate many popular Starbucks specialty coffee drinks.  Using coffee roasted fresh from a local roaster will without a doubt make significant improvements to these emulations of Starbucks recipes. You’ll also find some recipes to some of Starbucks other culinary treats, like some of their cookies and scones.
